I LOVE THIS VEGAN LENTIL STEW. This is the stew I make when my fridge is looking really sad, but I want something with TONS of flavor that's healthy and easy to make.
That's when this baby gets created. A super flavorful stew that comes together quickly with pantry staples! The only perishable ingredients you'll need are: an onion, garlic and ginger. Other than that, you will need some pantry items that are common, especially if you're already a seasoned cook! Throw it together, let is simmer for about 30min, and it's ready to be devoured. Serve it by itself, with tortillas, rice, cauliflower rice, or anything else to soak up the goodness.
Instant Pot Option
I've also made this recipe in an Instant Pot! To do this, use the sauté function on the Instant Pot and follow steps 1-4 listed in the recipe below. However, reduce the liquid by 1 cup (use only 2 cups of water/broth for this recipe). Set the Instant Pot at manual High pressure for 4min. Let the mixture natural release for at least 10min. Then, release the steam and continue from step 6 (add remaining ingredients and adjust seasonings).
